One Step Chili

This recipe takes bout 25 minutes


Ingredients
1 pound lean ground beef (90%)
1/2 cup chopped green pepper
1 can pinto beans, and liquid (optional)
1 crushed or finely chopped garlic clove
1 1/2 tablespoons chili powder
1 (14 1/2 ounce) can peeled whole tomatoes with juice, chopped or crushed with your hands
1/2 teaspoon salt
1/2 teaspoon cumin
1 (6 ounce) can tomato paste
1/4 teaspoon red pepper flakes or a few dashes of hot sauce
1/2 cup chopped onion
Shredded cheese for topping

 Equipment
  •  knife and cutting board
  • 2 quart microwavable dish with lid
  • big spoon
Procedure
    1. Combine all ingredients in microwave-safe 2 quart casserole. Cover, microwave on high 5 minutes. 
    2. Stir to break up meat. 
    3. Microwave additional 20 minutes, stirring every 10 minutes. 
    4. Top with shredded cheese
    Note: If beef is less lean. Microwave first and drain off excess fat.

    Makes 4 servings
